If you’re looking for a fresh, satisfying meal that doesn’t sacrifice flavor, this BBQ Ranch Salad checks every box. It’s loaded with lean protein, colorful veggies, and that irresistible sweet-and-smoky BBQ + creamy ranch combo. Perfect for busy weekdays, meal prep, or a quick post-workout lunch.
Why we love this salad:
• It’s packed with protein to keep you full and energized
• Quick and easy to throw together with simple ingredients
• Naturally gluten free and easy to make dairy free
• Balanced with carbs, fats, and protein for steady energy
• Customizable based on what you have on hand
Ingredients:
- Chicken Breasts - A lean, high-quality protein source that supports muscle recovery and keeps you satisfied.
- BBQ seasoning - Adds smoky, bold flavor without extra calories—an easy way to elevate simple chicken. I personally love the Treager seasoning that came with our grill.
- Corn - Provides natural sweetness and carbohydrates for energy, plus fiber for digestion.
- Zucchini - Low in calories and rich in vitamins, it adds volume and nutrients without heaviness.
- Bell Pepper - Loaded with vitamin C and antioxidants, plus a natural crunch and sweetness.
- Green Onion - Adds a mild onion flavor and freshness that brightens the whole dish.
- Lettuce - A light, hydrating base that adds volume and helps balance the richer toppings.
- BBQ sauce - Brings that classic sweet and tangy flavor that pairs perfectly with grilled-style chicken. My two favorites are Stubbs and Noble Made.
- Ranch - Adds creaminess and ties everything together—easy to make dairy-free with simple swaps. I use Clean Monday Meals ranch seasoning to make my own. (code GFMACROS10)
Pro Tips:
- Cook your chicken in a single layer so it gets a slight sear and better flavor
- Don’t overcook the zucchini, keep a little bite for texture
- Chop everything evenly for the best bite in every forkful
- Add the dressing right before serving to keep the lettuce crisp
Notes, Swaps and Oven Directions:
- This recipe is perfect for meal prep—store components separately and assemble when ready to eat
- You can adjust BBQ and ranch amounts based on your preference - macros will change.
- Swap chicken for ground turkey or shredded rotisserie chicken
- Use dairy free yogurt and mayo for a fully dairy-free ranch
Make it a meal:
- This salad is already a complete, balanced meal. If you’d like to round it out, serve it with your favorite gluten-free bread or a warm slice of cornbread.
