RASPBERRY JELLO SALAD
Sweet, salty, and oh-so-refreshing—this Raspberry Pretzel Jello Salad is the dessert you didn’t know you were missing!
Why we love Raspberry Jell-O Salad:
The perfect balance of sweet, salty, and tangy in every bite!
This dish is a crowd favorite at every gathering! My girls request this “salad” every Christmas. It is sweet and can be your dessert for any occasion. For some reason years ago we had it with dinner and it became tradition. It isn’t Christmas with out this dish on the table.
Ingredients
- Pretzels - the pretzels make a crust that gives a satisfying crunch. The salty flavor of the pretzels complements the sweetness of the dish. My favorite GLUTEN FREE pretzels are from FitJoy. *UPDATE: This year we used Snyders Gluten Free pretzel sticks. I defiantly DO NOT recommend using this brand. The pretzels ended up being soggy.
- Sugar - Sugar helps with caramelization when the crust is baked, adding a subtle golden-brown color and an extra layer of crispness.
- Butter - One of butter’s primary functions in a pretzel crust is to help bind the crushed pretzels, sugar, and other ingredients together. Butter adds a rich, creamy flavor to the pretzel crust that complements the salty crunch of the pretzels. For DAIRY FREE my two favorite butters are Miyokos (which is cashew based) and Melt Organics.
- Cream Cheese - Cream cheese gives the creamy layer its signature smooth and velvety texture. The slight tanginess of cream cheese helps balance the sweetness of the Jello and sugar in the crust.
- Cool Whip - Cool Whip adds a light, airy, and fluffy texture to the creamy layer. This helps balance out the richness of cream cheese. For DAIRY FREE I use the Lite Coco Whip by So Delicious.
- Water - Water is used in Jello primarily to dissolve the gelatin powder, which is the key ingredient that gives Jello its signature texture.
- Raspberry Jello - Raspberries are used for both flavor and texture. The tartness and sweetness of the frozen raspberries complement the creamy, sweet filling and the salty, crunchy pretzel crust. Raspberries also add a vibrant color to the dish, making it visually appealing.
- Raspberries - When added to the Jello, frozen raspberries release juice as they thaw, which helps to infuse the Jello with extra raspberry flavor. The cold temperature of the frozen berries also helps the Jello set more quickly when mixed in.
{RASPBERRY PRETZEL JELLO SALAD}
1) Mix and press into a 9x13 pan. Bake at 350° for 10 minutes. Allow to cool.
Middle Creamy Layer:
8oz @traderjoes cream cheese, softened
1c sugar
8oz @so_delicious Coco Whip
2) Beat cream cheese and sugar until fluffy, then fold in Coco Whip. Chill.
Jello Layer:
1 large and 1 small box of raspberry @jello
3c boiling water
12oz frozen raspberries
3) Dissolve Jello in boiling water. Allow to cool. Add frozen raspberries. Stir until Jello thickens. Spread over creamy middle layer. Chill until set.
