LASAGNA SOUP - ONE POT

It is hearty, rich and packed with protein. And all in under 30 minutes! Plus, it's made in just one pot, which means less cleanup and more time to enjoy dinner around the table.
This version is naturally gluten free and dairy free but still delivers everything you love about lasagna: savory Italian sausage, tender noodles, flavorful marinara and a creamy swirl at the end.

Pro Tips:
- Chop your sausage small so it blends evenly into each bite.
- Toast your tomato paste for a couple of minutes before adding liquids, this deepens the flavor.

Notes, Swaps and Oven Directions:
- Vegetables - Add chopped zucchini or yellow squash for extra fiber and color
- Cheese - If you tolerate dairy, stir in ricotta or top with mozzarella for a more traditional lasagna experience.
- Pasta - Any gluten free pasta shape works. For this soup I love the look at texture of Jovials Mafalda.

{LASANGA SOUP - ONE POT}

2 Applegate Italian Sausage links
6oz ground turkey
50g onion
1/2 Tbs garlic, minced
3 Tbs tomato paste
2 c Rao's marinara
1/8 tsp crushed red pepper flakes
3/4 tsp Redmond kosher salt
1/4 tsp each: garlic powder, black pepper, oregano, thyme
4 c chicken stock (960mL)
2 c spinach
1/4 c lite coconut milk
DIRECTIONS:
1) Chop the sausage into small pieces. Heat a large stock pot over medium0-high heat. Add sausage and ground turkey, cooking until browned. Remove from pan.
2) Add onion to the pot and sauté 1-2 minutes until softened. Siri in garlic and tomato paste, simmering for a few minutes to deepen the flavor.
3) Add seasonings, marinara, chicken stock and cooked meat back into the pot. Bring to a boil.
4) Add pasta, cover and simmer on low for about 20 minutes, until noodles are tender.
5) Stir in spinach until wilted.
6) To serve: Ladle soup into bowls. Top with 1 Tbs coconut milk, extra spinach and red pepper flakes if desired.
Instant Pot Instructions:
Add remaining ingredients (except spinach and coconut milk).
Seal lid, cook on Manual High Pressure for 6 minutes. Quick release.
Stir in Spinach and let wilt.
Serve as above.
