{SMOKEY CHICKPEA GLOW BOWL}

360g cooked quinoa
1 tsp turmeric, dried
400g butternut squash, roasted
400g broccoli, roasted
1/4 smokey chickpeas, rinsed and drained
120g avocado
40g pumpkin seeds
Optional: cashew sour cream
Smokey Chickpeas:
1 can chickpeas, drained and rinsed
1/2 tsp sea salt
1 tsp coconut sugar
3/4 tsp garlic powder
3/4 tsp onion powder
1 tsp chili powder
3/4 tsp smoked paprika
1/8 tsp chipotle chile powder
DIRECTIONS:
1) Roast your veggies: Cube butternut squash and chop broccoli. Toss in olive oil, salt, and roast at 375°F for 30–40 minutes or until tender and slightly crisp.
2) Cook Quinoa: Follow package directions. once cooked, stir in turmeric while warm.
3) Make Smokey chickpeas: Add rinsed chickpeas to a bowl. Drizzle with olive oil and sprinkle in all the seasonings. Toss to coat. Air fry at 400°F for 12 minutes, staring half way, until desired crispness.
4) Assemble your bowl: Add quinoa to the base and top with roasted veggies, smokey chickpeas, avocado and pumpkin seeds.
5) Enjoy! This bowl is great warm and perfect for meal prep days.
