EASY CHOCOLATE CREAM PIE - VEGAN

If you’re a fan of rich, velvety chocolate desserts, then you’re in for a treat with this easy and indulgent chocolate pie. Imagine a silky smooth chocolate filling nestled in a gluten free graham cracker crust, topped with a dollop of whipped cream or a sprinkle of chocolate shavings. It’s the perfect dessert for any occasion—whether it’s a cozy family dinner or a special celebration.


Why we love this easy Chocolate Cream Pie:

There is a lot to love about this pie. It is rich and creamy. No matter the time of year, this is the perfect treat. It's comforting and indulgent during the colder months, yet refreshing and satisfying for warmer months, especially when topped with whipped cream.

No need to be a baking expert! This recipe is simple, with just a few ingredients you probably already have in your pantry.

The filling is luxuriously smooth, with deep chocolate flavor that satisfies any sweet tooth.


Ingredients 

  • Gluten Free graham cracker pie crust -  The flavor of graham crackers is relatively neutral, with just a hint of honey and cinnamon. This allows the chocolate to shine as the star of the pie. The simplicity of the graham cracker crust lets the rich chocolate filling take center stage without competing with more complex flavors. I prefer to make homemade graham crackers with Cup4Cup Ancient grains GLUTEN FREE blend. However, you can use your favorite store bought graham crackers or Mi-Del pre-made GLUTEN FREE pie crust. 
  • Dairy Free chocolate chips When melted into the pie filling, chocolate chips create a velvety smooth, silky texture. They contribute to the smoothness of the chocolate filling without the grainy texture that can sometimes result from using cocoa powder alone. My favorite allergy friendly chocolate chips are Enjoy Life Chocolates
  • Canned coconut milk Using canned coconut milk in this chocolate pie brings several key benefits, enhancing both the texture and flavor of the pie while keeping it plant-based and dairy-free. The high fat content provides a rich, smooth, and creamy texture. 
  • Cashew butter - Cashew butter has a naturally smooth and creamy texture, which makes it perfect for creating rich, velvety fillings. Cashew butter has a relatively soft and spreadable consistency, making it easy to blend with other ingredients in a pie filling. I make my own cashew butter by adding raw unsalted cashews to my food processor. 
  • Cocoa powder - Cocoa powder works well with a variety of ingredients commonly found in chocolate pies, like vanilla and Crio Bru. It can help highlight these complementary flavors without competing with them, allowing the chocolate to shine as the main star. For a more intense, rich and dark cocoa powder, you could try Jet Black Cocoa powder.
  • Vanilla - Vanilla has a natural ability to enhance the taste of chocolate. The warm, sweet undertones of vanilla work in harmony with the cocoa to bring out the best in the chocolate.
  • Crio BruIncorporating Crio Bru adds an entirely new layer of flavor and complexity. It delivers an intense, rich chocolate taste, making it ideal for those who love deep, complex chocolate. 
  • Sea Salt - Adding sea salt helps balance sweetness, enhances the chocolate flavor, and introduces a textural contrast that elevates the dessert. My go to salt is Redmond Sea Salt (code GFMACROS). The natural minerals and purity of the salt make it a healthier and more wholesome choice compared to refined salts, while its subtle, complex flavor profile enhances the overall taste. 




{EASY CHOCOLATE CREAM PIE}
GF Graham cracker pie crust 
400g @enjoylifefoods semi sweet chocolate chips
1 can @thaikitchen coconut milk
1/2c (128g) cashew butter, raw
10g cocoa powder
1 tsp (5g) vanilla
1/2 tsp (2-3g) @criobru
1/8 tsp @redmondrealsalt sea salt

Optional: 
dairy free spray cream, my favorite is from @traderjoes
Extra chocolate for shaving

DIRECTIONS:
1) Prepare graham cracker crust before hand (homemade or store bought) 

2) In a double boiler over medium heat, add the chocolate chips and coconut milk. Stir continuously until mixture is melted.

3) Pour chocolate mixture into a blender or food processor. 

4) Add the cashew butter, cocoa powder, vanilla, crio bru (if using) and salt to the blender of chocolate.

5) Blend until fully smooth and pour over the prepared pie crust.

6) Place in the fridge overnight for the best set texture.

7) When ready to serve garnish with optional whipped cream and shaved chocolate.
