THAI GREEN CURRY BOWL

In less than 30 minutes you can have this one pot curry chicken bowl on the table! Plus it is GLUTEN FREE and DAIRY FREE and packed with protein and veggies! 


Why we love this curry Bowl:
It's simple to make and packed with veggies. Just chop your veggies and dice your chicken. Cook and sauté everything then add the curry sauce. The meal is naturally gluten free and dairy free. Leave off the cashews and this meal is allergy friendly. (*the new sauce will be free from fish too).

The spices in this bowl have anti-inflammatory properties that may help reduce the risk of chronic disease.

Ingredients 

  • Carrots - a great source of vitamin A and beta-carotene
  • Broccoli - contains fiber, antioxidants and anti-inflammatory properties
  • Bell Pepper - bell peppers contain antioxidants like beta-carotene and lycopene. They also contain Vitamin C, Vitamin B6, folate, potassium, and Vitamin K
  • Zucchini - can help with digestion since it is high in water and fiber. Zucchini is also a good source of folate
  • Chicken breast - a lean protein that can help with muscle growth. Chicken breasts contain Vitamins B, D as well as niacin calcium, iron, zinc, and potassium.
  • Green Curry Sauce - the simplicity of the jarred curry sauce from Parami is made with real ingredients that are anti-inflammatory. 


{THAI GREEN CURRY BOWL}
Serves 4

185g carrots 
100g broccoli 
125g red bell pepper
100g zucchini 
16oz chicken breast 
1 tsp kosher salt (I use @redmondrealsalt)
1/8tsp black pepper 
1 jar @parami_taste Green Curry sauce 

DIRECTIONS:
1) Chop veggies. Heat a large skillet over medium heat. Spray with cooking spray and saute veggies for a few minutes to soften. Remove from skillet and set aside. 

2) Chop chicken. Add to the same skillet. Sprinkle with salt and pepper. Cook until no longer pink. 

3) Return veggies to the skillet. Pour in an entire jar of @parami_taste Green Curry sauce. Mix everything together. Allow the sauce to warm up. 

4 ) Serve over rice or cauliflower rice. Drizzle with fresh lime and cashews if desired. (not included in macros)
