SHEET PAN CHICKEN FAJITA TACOS

It's time to spice up your Taco Tuesday! These simple sheet pan Chicken Fajita Tacos will be the perfect addition to your taco rotation.


Why we love these sheet pan tacos:
Who doesn't love tacos? Especially those that are paleo, gluten free, diary free and budget friendly. Depending on the tortilla you use, this meal can also be nut free.

This meal is quick to prep and just as fast to make. All it takes is a bit of slicing and chopping. Then toss and bake!

Ingredients 

  • Boneless, skinless chicken breast
  • Bell peppers - a top source of vitamin C, which acts as an inflammation-fighting antioxidant. They also contain carotenoids, which are plant-based antioxidants that help reduce cell damage.
  • Kosher salt - helps bring out the natural flavors and helps aid with cooking the chicken
  • Black pepper
  • Seasonings
  • Tortillas - choose your favorite tortilla that fits your families dietary needs. We love the Siete almond tortillas. I buy them in bulk at Costco. For a nut free version, you can also buy a cassava toritilla, or make a homemade version.
  • Salsa -
  • Guacamole or avocado - a healthy fat that contains fiber and potassium 
  • Cilantro - rich in folate
  • Lime - contains vitamin C and antioxidants



{SHEET PAN CHICKEN FAJITA TACOS}
Serves 4

16oz chicken breast, cut into bite size pieces or strips 
100g red bell pepper, thinly sliced
75g yellow bell pepper, thinly sliced
75g orange bell pepper, thinly sliced
1 tsp kosher salt
1/2 tsp black pepper
1 tsp garlic powder 
1/2 tsp onion powder
1 Tbs cumin
1 1/2 tsp smoked paprika
@sietefoods almond flour tortillas 
8 Tbs Salsa
Guacamole or avocado 
Cilantro 
Lime juice 

DIRECTIONS
1) 
Preheat oven to 400 degrees. Place chicken and peppers in a single layer on a large baking sheet. Spray with cooking spray.

2) Sprinkle with seasonings. Toss to coat evenly.

3) Bake for 10 minutes. Then stir meat and veggies on the pan and bake for 5 more minutes.

4) Serve on tortillas with salsa, guacamole or avocado, cilantro and lime juice.
